With the rapid development of freeze-drying machines in the food industry, besides Xu Fuji, the snacks for the New Year include fruit and vegetable crisps prepared by freeze-drying, which have gradually gained recognition for their environmentally friendly, green, non fried, and high nutritional characteristics. They have also become a popular choice for snacks during the New Year.

The freeze-drying process for making New Year snack fruit and vegetable crisps involves washing and cutting the raw materials, blanching and enzyme killing them, quickly cooling them in a pre cooled color protection solution, homogenizing them, and laying a 5-10mm thick layer of material on a metal tray. The material is then inserted into an integrated metal grid mold and pre frozen at -30 ℃. The following vacuum freeze-drying process is adopted: in the stage where the temperature is below 10 ℃, the temperature is raised at 3-5 ℃ per hour. When the temperature reaches 10 ℃, the temperature is maintained for 1 hour, and then the temperature is further raised at 5-7 ℃ per hour. At 40 ℃, the temperature is maintained for 2 hours, and freeze-drying is completed.
