3. Sterilization
  
Soak bananas in a 300ppm sodium hypochlorite solution for 15 minutes.
  
4. Cleaning
  
Take out the banana and rinse it with clean water until there is no residual sodium hypochlorite.
  
5. Peel off the skin
  
Artificially peel and extract the fruit pulp.
  
6. Pre freezing
  
Freeze to a certain temperature in a cold storage.
  
7. Slice it
  
In a low-temperature environment, the banana is sliced into slices in a slicer with a thickness of 0.6~0.8cm.
  
8. Freeze
  
The eutectic point of bananas is -33 ± 1 ℃, and the freezing temperature is generally 5-10 ℃ lower than the eutectic point temperature of the material, so the freezing temperature of bananas is -40 ℃. The material needs to be frozen to * for a certain period of time, and then maintained for 2-3 hours after reaching the freezing temperature.
  
9. Vacuum freeze-drying
  
Set the vacuum degree, cold hydrazine temperature, heating plate temperature, and time on the food freeze dryer, and perform vacuum freeze drying.
  
10. Out of warehouse
  
After vacuum freeze-drying is completed, control the temperature and relative humidity of the environment, and then pack it out of the warehouse.
